Dukan Thumbprint Cookies

Ingredients:
- 1 package Dukan Diet Oat Bran Vanilla Muffin Mix
- 1 cup frozen rhubarb, thawed
- 4 scoops of stevia
- 1 egg white
- 1 large or extra-large whole egg
- ½ cup fat-free milk or soy milk
- 3 tablespoons grape seed oil
- Preheat oven to 350F
- Place thawed rhubarb in a mixing bowl and add 3 scoops of stevia. Blend using a hand blender or regular blender
- In a medium-sized mixing bowl, combine muffin mix with milk and oil
- In a separate bowl, whisk eggs for one minute until well beaten, add to the muffin mix, and blend well
- Spoon the batter onto a non-stick cookie pan or a pan lined with parchment paper
- Add 1 teaspoon of rhubarb puree to the center of each cookie
- Bake for 20 minutes
