Dukan Thumbprint Cookies

Cooking time: 5 minutes - Cook time: 20 minutes

  • 1 package Dukan Diet Oat Bran Vanilla Muffin Mix
  • 1 cup frozen rhubarb, thawed
  • 4 scoops of stevia
  • 1 egg white
  • 1 large or extra-large whole egg
  • ½ cup fat-free milk or soy milk
  • 3 tablespoons grape seed oil
  1. Preheat oven to 350F
  2. Place thawed rhubarb in a mixing bowl and add 3 scoops of stevia. Blend using a hand blender or regular blender
  3. In a medium-sized mixing bowl, combine muffin mix with milk and oil
  4. In a separate bowl, whisk eggs for one minute until well beaten, add to the muffin mix, and blend well
  5. Spoon the batter onto a non-stick cookie pan or a pan lined with parchment paper
  6. Add 1 teaspoon of rhubarb  puree to the center of each cookie
  7. Bake for 20 minutes
